Sweet Potato Spuds

Recipe for tender beef roast, shredded and served in roasted sweet potatoes (aka a spud IYKYK).

Y’alllllll, these are so good. So nutritious. It feels like a cheat meal, but it’s actually so good for you!

Ingredients:

  • 2-3 lb. grassfed chuck roast
  • 4-8 sweet potatoes (depends on how many you’re feeding – I did 6 so we can have leftovers!)
  • 1 small red onion, cut into thin slices (you only need 1/2 the onion – save the other half for another meal!)
  • 1/2 c. organic beef broth (or homemade bone broth)
  • 1 tbsp. coconut oil
  • 2 tbsp. grassfed butter
  • fresh thyme
  • salt & pepper

Directions:

  1. Preheat the oven to 450°.
  2. Cut your chuck roast into nice size chunks. Turn Instant Pot to sauté function and add 1 tbsp. coconut oil. Add the chuck roast chunks and brown for 2 minutes per side (about 5-6 minutes total). Remove roast from the pot and set aside on a plate.
  3. This is a great time to see if your oven is preheated and pop those sweet potatoes in the oven!
  4. (Next you have the option of using the same oil to cook your onions in, or you can quickly rinse the pot! I personally like to rinse my pot and use butter for my onions – totally personal preference!). Add butter to instant pot, and then add sliced onions. Saute for about 1-2 minutes until they are starting to get tender and very fragrant. Turn the Instant Pot off.
  5. Add 1/2 c. beef broth to deglaze the pot and scrap up any bits from the bottom. Add roast on top of onions. Add fresh thyme sprigs. Pop that lid on and cook on high pressure for 50 minutes.
  6. When the timer goes off, let it naturally release for 10 minutes. Then, take the lid off and shred the roast up! You can 100% take some of the roast juice and make a quick gravy or eat it as is. Whatever you’re feeling.
  7. When the sweet potatoes are done, let them cool (fun fact: if you let them cool for at least 30 minutes, it lowers the glucose response). Top with the meat and any toppings of choice!
  8. BOOM. Dinner is done. Amazing. So good.

And the best part? I bought a 2 pack of chuck roasts at Costco because I’m waiting on my local farm delivery, soooo we will be having roast again this week! I went ahead and chopped it up and added it to a gallon size bag. It’s ready to pull out and make another meal with on Thursday! Just saying… 😉
